Aloo-Gobhi ki Bhujia
I am die hard fan of all kind of Bhujias, especially the ones which has the word aloo in them.. 🙂 But then this is something you already know,if you have been here earlier. Today I am sharing with you how to make aloo-gobhi ki bhujia. This is a popular side dish for lunch/ Dinner. It also goes perfectly well with plain parathas / Plain pooris; for breakfast. We make this during winters as we get fresh cauliflowers then.
You will Need: 4-5 medium sized potatoes, 500 gm of cauliflower, 1 large onion, 2-3 green chillies, 1 tspn turmeric powder, 1.5 tbspoon Cooking Oil,Salt to taste
Peel off the potatoes and onion. Wash & chop the onions and keep aside. Cut the green chillies in 2-3 parts and slit each part in two. Now Cut each potato in 4-6 parts (depending on their size); chop further each parts as shown in the pic. Wash the chopped potatoes and keep aside. Clean the cauliflower and cut it into small pieces;as shown in the pic. You may use its stem as well. Wash them and keep aside.
Heat a thick bottomed kadai ( you may use non-stick pans but kadai is better). Add oil. Once heated’ add green chillies followed by onions. Saute the onions till they turns soft ,on a medium flame. Add cauliflowers. Saute it for 5-7 minutes over medium to high flame. Add Potatoes. Saute it for 5-7 minutes. Add turmeric powder and salt to it. Saute it for 2-3 minutes. Now cover and cook for 10-12 minutes. Keep stirring in between. This time depends on how thick each pieces of potatoes or cauliflowers are. Once cooked, Serve for Breakfast (Parathe/Poori) or with Dal-Chawal.
Tip Of The Day: Green chillies can be easily replaced by dry red chillies. I normally wash cauliflowers with warm water; as more than often small algaes can be found in between their flowers. You may skip onion,if you want to.
