Aloo ka chokha
This is something very close to my heart.. An essential part of menu, whenever I visit home. And excuse my modesty but nobody makes them better than us Biharis. You have definitely tasted it, if you have a bihari friend. This goes well with dal chawal and is an essential while serving khichdi. And what’s more.. You can dish out amazing aloo-parathas with the leftovers. But that hardly happens; in my house at least. That’s because there is nt any left.. 🙂 With minimum ingredients at hand, this is something that will enhance the taste as well as look of your plate.
You will need : 500gms medium sized potatoes, 2 medium onions, 2-3 dry red chillies, 1.5 tspn of jeera,salt and Oil
Wash the potatoes. Boil them in a pressure cooker; 2whistle should be sufficient but may vary depending upon potatoes. Meanwhile remove the skin of onions, wash and chop them. Keep aside. Remove the potato skins. Mash them with hand or masher. Add salt and mix properly.
Now heat oil in a thick bottomed pan or kadai. Add jeera and dry red chillies(each broken in 2-3pieces. Add chopped onions. Stir and cook till onions turns pink / translucent/soft. Now add the mashed potatoes. Now comes one of the most important part. Keep mixing the potatoes in kadai with a flat ladle, on a sim to medium flame. Once the potato is properly mixed and also turns a bit brownish pink.. Aloo ka chokha is ready to be served.
